I absolutely love the fall flavors, specially pumpkin, although to be truthful I eat pumpkin flavored foods all year long despite what season it is.
However, I fully take advantage during the fall and stock up on pumpkin everything, since that’s when society deems it’s most acceptable to eat pumpkin flavored foods.
I decided to make a dessert in honor of my Father’s birthday. Although his real birthday was over a month ago, I had surprised him with Red Sox Tickets for a Sunday afternoon game in September. Before the game I decided to make him lunch, A sauteed broccoli, caramelized onion, and smoked bacon quiche with a side salad, and pumpkin, chocolate chip crumb cake for dessert.
Now if you read on to the recipe you may be surprised to learn that I didn’t quite make this recipe from scratch, I used a boxed loaf cake for the base of this dessert, but please don’t judge me too harshly remember I am a full time student with three jobs, my time is not my own (cue the sympathy)!
Anyways, sometimes a persons just got to know when to ask for help, I didn’t quite have the time to make a cake from scratch so I swallowed my pride and asked Pillsbury for a bit of help!
The dessert turned out great, especially with my few additions! The day was great, the weather lovley, and the Red Soxs won the game…..not a bad day!
1 cup of Flour
1/2 cup of granulated sugar
1/2 cup of brown sugar
3 tbsp of butter
1 tbsp of cinnamon
1 box of Pillsbury pumpkin quick bread
1 cup of dark chocolate chips
1) preheat oven to 350, mix together ingredients for the quick bread according to the directions on the box, once thoroughly mixed fold in chocolate chips, pour batter into a greased load pan
2) In a separate bowl, combine sugars, flour, and pieces of butter, use a hand blender to combine until mixture has a crumble like texture, pour it over the batter, bake for 45 minutes or until fork is clean when removed from the bread, cool and serve warm.
